This dish is very simple, easy to cook, and tastes AMAZING. Eating healthy does not have to be boring! I enjoyed this dish with my family.
Cilantro Lime Shrimp:
Ingrediants:
- 2 teaspoons of olive oil
- Shrimp - no idea how much, we had a large bowl full - shelled
- 1 teaspoon of minced garlic
- Lime juice (bottle)
- Salt and Pepper to season
Heat a large frying pan on medium-high heat. I had mine set on 7. Add the olive oil to the pan and when it gets hot add the shrimp. Season with salt and pepper. After a few minutes add in the lime juice and garlic. Mix thorougly and make sure your shrimp is cooked fully. Remove from heat, toss with cilantro, and serve.
I don't know about you but shrimp alone just doesn't fill us up. I paired the shrimp with some brown rice.
Cilantro Brown Rice with Jalapenos, Lime, and Cilantro:
Ingrediants:
- Cooked brown rice (3/4 uncooked is 1 serving so multiply that by the number of people)
- 1 tablespoon of olive oil
- 1 diced jalapeno pepper (or less, ours was spicy)
- 1/2 teaspoon of salt
- 2 scallions diced
- 1/4 cup of fresh cilantro
- 2 tablespoons of lime juice (bottle)
In a small pot add the olive oil and then saute the jalapeno pepper on medium heat. Mix in the rice and salt - let this warm up for a few minutes. I had my burner set on low at this point. The mix in the lime juice, cilantro, and scallions. Serve warm.
It tastes best if you serve the shrimp on top of the rice.
