INGREDIENTS:
- 2 egg whites
- 1/4 cup coconut flour - Whole Foods
- 1/2 cup almond milk
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/8 teaspoon cinnamon
- liquid stevia (I use 4 drops) - Whole Foods
DIRECTIONS:
- Mix all of the ingredients together - this may take a few minutes. Make sure it thickens up.
- Heat a skillet on medium high heat and spray with PAM
- Place 2 spoonfuls of batter on the skillet and cook like a regular pancake
- Top with whatever you like - 100% maple syrup, fresh fruit, peanut butter, etc...
